Blueberry Muffins From Scratch Recipe

Ingredients

  • 4 tbsp softened butter
  • 1/2 cup sugar
  • 1 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 cup flour
  • 1/4 cup milk
  • 1 1/2 cup blueberries
  • flour for dusting
  • oil for coating pan

Instructions

  • Preheat oven to 375°.
  • Cream together softened butter and sugar, until light.
  • Beat egg into butter and sugar mixture.
  • Mix in vanilla.
  • Sift together flour, salt and baking powder into a bowl.
  • Alternate mixing in flour mixture and milk until all is incorporated into batter.
  • Dust the blueberries with flour to evenly distribute among batter.
  • Gently fold blueberries into batter.
  • Oil muffin pan to prevent sticking.
  • Evenly distribute batter between muffin cups.
  • Bake for 30 minutes.
